Description
There is halwa, and then there is Tirunelveli Halwa. This sweet has made the small south Tamil Nadu city of Tirunelveli world-famous — a translucent, amber-coloured confection made from the hard wheat grown along the banks of the Thamirabarani river, slow-cooked in generous quantities of pure ghee, sweetened with sugar, perfumed with cardamom, and garnished with golden fried cashews. The wheat variety and the river water are said to be irreplaceable elements of what makes this halwa unique. The Middle East gave the world halwa — but Tirunelveli made it iconic. This is the real thing.
