Description
Among the many varieties of murukku (Chakli) made across Tamil Nadu, Manavasi Murukku holds a special place. What distinguishes it is its surface u2014 unusually smooth, almost polished u2014 and its texture on the bite: a clean, sharp crunch that gives way to a light, airy interior. Made from a blend of rice flour and urad dal flour, seasoned with asafoetida and either sesame or cumin seeds, each strand is pressed through the mould by hand and fried to a precise golden colour. A murukku with genuine character u2014 firm, flavourful, and remarkably refined for what is technically a simple snack.
